Maize represents the next chapter of Johnny’s deeply personal memoir, and another step toward fulfilling his life’s work of deepening America’s understanding and appreciation of Mexican food. He’s proud to showcase the depth of his heritage with an 18-course tasting menu that stays true to Mexican tradition with deep respect for masa, sourced with care and nixtamalized in-house.

The 16-seat space welcomes eight guests at a time. The experience opens in a dedicated welcome antechamber, where guests are greeted with a libation that sets the tone for the story to come. From there, the evening unfolds as eight guests begin at the cold counter for raw specialties, move through the glass-enclosed wine and fermentation room—with house-ferments like pulque, tejuino, cremas, vinegars, and atole agrio—and conclude at the hot counter, where masa takes center stage.

We proudly partner with the Masa Seed Foundation to grow all of our masa just southeast of Boulder as part of a pioneering ancestral Mexican corn project. Each fall harvest reflects our commitment to preserving heirloom varieties and honoring the cultural legacy of Mexican corn. In collaboration with Bozal, this hand-harvested corn is also transformed into Bozal Maize, an exclusive vegan corn pechuga-style mezcal crafted for Maize.
